Gołąbki Ireny

składniki:

kapusta (jeśli to możliwe - włoska)
mielona karkówka
tłuszcz
gotowany ryż
cebula
1 jajko
liść laurowy
ziele angielskie
czarny pieprz

koncentrat pomidorowy
olej
mąka

Przygotowanie kapusty:
Usunąć rdzeń kapusty wycinając dziurę u podstawy główki
włożyć do dużego (lepiej większego niż ten na zdjęciu) garnka z wodą. Ugotować.
Mieszać kapustę w podczas gotowania tak, żeby liście się odczepiły i zaczęły pływać w wywarze. Wyjąć je z garnka.
Nacinać grzbiet każdego liścia, co ułatwi zwijanie.
Odstawić razem z połową wywaru.

Przygotowanie farszu:
Opłukać karkówkę pod zimną wodą. Pociąć na kawałki (5x5 cm), zmielić.
Podsmażyć cebulę na oleju na złoto. Odstawić.
Wymieszać karkówkę, zagotowany ryż (niewiele), pieprz, sól i jajko oraz dodać trochę bulionu (jeśli jest).

Zwijanie:
Mięso układać na liściu i zawijać (można obejrzeć klip, w którym Irena pokazuje jak to robić). Włożyć zwinięte gołąbki do garnka z odstawionym wcześniej wywarem i kilkoma liśćmi na dnie, żeby gołąbki się nie przypaliły. Dodać liście laurowe, ziele angielskie, smalec, czarny pieprz i sól.
Gotować na średnim ogniu, aż liście zrobią się delikatne, wyjąć zanim się rozgotują.
Dodać koncentrat pomidorowy.
Łagodnie mieszać i przesuwać gołąbki, Do wywaru dosypać odrobinę mąki, aż uzyskamy mleczną konsystencję. Wciąż mieszać obracając garnek.

Repolhos Flutuantes de Irena

Ingredientes:

repolho
pescoço de porco moído
gordura de porco
arroz cozido
cebolas
1 ovo
folhas de louro
pimenta da Jamaica
pimenta preta

extrato de tomate
óleo
farinha

parte repolho:
tirar a espinha do repolho, fazendo um corte na base no fundo e cavando o centro.
colocado em um recipiente (maior do que o da imagem, se possível) grande com água, ferva.
girar o repolho na água, com um garfo grande, para que as folhas destaquem sem machuca-las, nadando livres na água, e retirar.
fazer um corte plano na coluna externa para que possa assim fazer os rolos sem dificuldade.
reserve.
reserve também 1/2 do que a água de cozedura.
parte da carne:
lave a carne de porco em água fria. corte em pedaços (5 x 5 cm), moa.
em uma panela, refogue as cebolas no óleo até eles dourar, cor de caramelo..reserve.
Em uma tigela misture a carne de porco, arroz cozido (pequena quantidade)
sal, pimenta e um pouco de egg.and caldo de carne, se você tiver.

rolar parte:
coloque a carne misturada dentro da folha e enrole como um rolinho primavera (você pode assistir o vídeo onde Irenna mostra como fazê-lo)
coloque-os em uma panela com a água reservada, com algumas folhas do repolho no fundo de modo que os rolos do fundo não queimem ou cozinhem demais.adicione as folhas de louro, pimenta da Jamaica, gordura de porco, pimenta do reino e sal.

Floating Cabbage by Irena

ingredients:

cabbage (Italian if possible)
pork neck minced meat
pro fat
cooked rice
onions
1 egg
bay leaves
allspice
black pepper
salt
tomato extract
oil
flour

Preparing cabbage:
Remove the spine of the cabbage by cutting a hole at the bottom.
Put it into a large (larger than the one on the picture if possible) jar with water and boil.
Turn the cabbage in the water, with a big fork, to allow the leaves to detach, and float around in the water, and then take them out.
Make a flat cut in the back spine so they are easier rolled.
Put them away along with 1/2 of the water/broth.


Preparing meat:
Rinse the pork in cold water. cut it into pieces ( 5 x 5 cm), mince it.
Fry the onions in oil until they get golden. Put them away.
Mix the pork with cooked rice (small amount)
pepper, salt and egg in a bowl, and add a bit of bouillon if you have it.

Rolling instructions:
Put some meat onto a leaf and roll it like a spring roll (you can watch the video where Irena shows how to do it).
Once rolled, put them in a pan with the broth water, with some cabbage leaves at the bottom so they don't overcook. Add bay leaves, allspice, pork fat, black pepper and salt.
Let it boil on medium heat until the leaves get smooth, but not mushy.
Then, add tomato extract into the water.
Mix it gently by slightly moving the rolls. add a little bit of flour and stir until you get a milk-like consistency. Mix it again by moving the pan in turns.

ingredientes:

100 g de manteiga, ou margarina
270 g de crackers
amêndoas
sementes de girassol
amendoins
passas de uva
cranberry seca
chocolate
530 g de leite condensado

derreta a manteiga / margarina
esmague os biscoitos até em que pulverizem
cobra uma forma com papel manteiga
derrame a manteiga derretida
cubra com as bolachas quebradas,
com as nozes e frutas secas
mais o chocolate em pedaços pequenos
adicione o leite condensado

pré aqueça o forno a 160 º C
e asse por 10 minutos.
corte em quadrados ainda quente.

ingredients:

100 g butter of margarine
270 g crackers
almonds
sunflower seeds
peanuts
raisins
dried cranberry
chocolate
530 g condensed milk

melt the butter/margarine
break/ smash the crackers until powdered
cover a tin with baking paper
drop the melted butter
cover with the smashed crackers
top with the nuts and dried fruits
plus the chocolate in small pieces
add the condensed milk

pre heat the owen at 160ºC
and bake it for 10 minutes.
cut into squares while still hot.
